ALLAHABAD KI TEHRI
MADE FROM KOSH BROKEN OATS.

Ingredients

  • 5-6 tbsp oil
  • 2 tsp jeera
  • 3-4 bayleaf
  • 1 small dal chini
  • 8-10 peppercorns
  • 4-5 cloves
  • 1 small cinnamon stick
  • 2-3 Green elaichi
  • 1 Black elaichi
  • 100 gms Onion chopped
  • 5 gms Ginger chopped
  • 5 cloves of Garlic chopped
  • 3 green chillies chopped
  • 100 gms carrots chopped
  • 50 gms beans chopped
  • 100 gms peas chopped
  • 250 gms broken oats
  • 50 gms kolam rice
  • 600 ml water

Method

  • In a heavy bottomed pan, heat oil and add in the jeera, bayleaf, dalchini, peppercorns, cloves, cinnamon stick, Green elaichi, Black elaichi and sauté for 3-4 minutes on a slow flame.
  • Now add onions and cook till transparent.
  • Then add garlic, ginger and green chillies. Stir for 2-3 minutes till their flavors come out and they brown a bit.
  • Now add beans, carrots and peas and cook for 2-3 minutes.
  • Add in the turmeric powder, red chilli powder, salt and cook the spices and vegetables for 5-6 minutes
  • Into the above masala base add KOSH broken oats and sauté for 5-6 minutes to coat oats well
  • Then add rice into oats mixture and cook for 2-3 minutes
  • Add water to the rice and oats mixture and cook for 2-3 minutes in the open.
  • Now cover the cooker with a lid and pressure cook for 1 whistle. Then switch off the gas and let the whistle settle. This will take 15-20 minutes
  • Finally garnish the tehri with a drizzle of ghee, a sprinkle of fresh coriander and some lime juice.
  • Serve hot with Raita and papad
