Aloo Methi Pulao
using Kosh Broken Oats.

Ingredients

  • 1 tbsp ghee
  • 1 inch cinnamon
  • 2 cloves
  • 1 green cardamom
  • 1 bay leaf
  • 1 small finely sliced onion
  • 1 tsp ginger garlic paste
  • 1 green chilli
  • ½ cup methi leaves
  • ½ heaped cup broken oats
  • 2 medium size potatoes
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • Salt to taste
  • 1 tsp oil
  • Coriander leaves for garnishing
  • 1 cup

Method

  • Slightly dry roast the kosh broken oats and keep it aside.
  • Heat oil in a pan, add cubed potatoes and cook till it becomes soft. Add turmeric powder, Red chilli powder and salt.
  • While the potatoes are cooking, heat ghee in a medium size pan.
  • Add cinnamon, cloves, cardamom and bay leaf. Let them splutter.
  • Add onion and sauté till it becomes soft. Add green chilli, ginger garlic paste and sauté for a minute.
  • Add roughly chopped methi leaves. Stir fry it for a second and add broken oats and 1 cup of water and salt to taste.
  • Cover and cook it till the water is absorbed by oats. This can also be pressure cooked for 2 whistles.
  • Once the oats are cooked, add the potatoes to it and gently fluff it. Turn off the flame. Cover and keep it aside for 10 minutes.
  • Garnish with coriander leaves and serve with raita.
