Ingredients

    For steaming:
  • ½ cup of Kosh Oats + Wheat Atta
  • ½ cup of Besan flour
  • ½ cup of Semolina
  • 1 and ½ cup of grated Bottlegourd (lauki)
  • ½ cup of finely chopped Onion
  • 1 teaspoon minced Ginger Garlic
  • 2 teaspoons finely chopped Green Chilli
  • ½ teaspoon Cumin Seeds
  • 1 teaspoons Sugar
  • 1 tablespoon finely chopped Coriander leaves
  • 1 big pinch of Asafetida
  • Salt to taste
  • ½ tsp Turmeric powder
    For sautéing:
  • 3 teaspoons oil
  • ½ teaspoon Mustard seeds
  • 1 teaspoon while Sesame seeds
  • 10 curry leaves
  • 1 big pinch Asafetida
  • ½ tablespoon chopped Coriander leaves for garnishing

Method

    For steaming:
  • In a medium size mixing bowl, add grated Bottlegourd (lauki) and Onion together. Add salt, mix well and keep it aside for 15 minutes. After 15 minutes, squeeze out the water from it.
  • After the water is squeezed out from the bottlegourd (lauki), mix the rest of the ingredients to it and make a smooth dough.
  • Divide the dough into equal part and make a log or a shape like a uniform rolling pin.
  • Place these logs in steamer and steam it for 15 minutes.
  • Cool down and cut into uniform slices.
    For sautéing:
  • In a kadai, heat oil.
  • When it is hot, throw in mustard seeds and let it crackle.
  • Add sesame seeds, curry leaves and asafetida. Mix well.
  • Add the sliced Muthia to this and mix well.
  • Let it be in low flame till the outer skin becomes crisp and slightly changes in colour.
  • Garnish with Coriander leaves and serve with tamarind or green chutney.
