MADE FROM KOSH BROKEN OATS.

Broken Oats Salad

Ingredients

  • 1/2 cup Kosh Broken Oats
  • 1 cup water
  • Salt to taste
  • 2tsp of olive oil
  • ½ cup chopped cucumber
  • ¼ cup chopped deseeded tomato
  • 1 small green bell pepper
  • Handful of iceberg lettuce
  • 5 pickled jalapenos
  • ¼ cup chopped carrot
  • ¼ cup chopped red onion
  • 2 tsp Lemon Juice
  • Black pepper powder to taste
  • ½ cup of cooked chickpeas
  • 2 to 3 tablespoons mint leaves

Method

  • Dry roast the kosh broken oats till it becomes crisp.
  • Boil a cup of water and add the roasted kosh broken oats. Once all the water content has been absorbed, turn off the flame and close it using the lid for 15 minutes and then fluff it off.
  • Add this cooked mixture to a wide bowl.
  • Add the rest of the ingredients and toss well to combine.
  • Once the above ingredients are mixed well, check the seasoning levels and adjust it as per the taste.
  • Pack it in the lunch box.
  • Serve this salad with fried papad and enjoy.
