Cheese and Corn Quesadilla

Ingredients:

    For making Tortillas:
  • 1 cup Kosh Oats + Wheat Atta
  • Salt to taste
  • 1 tsp oil
  • 1 tsp Baking powder
  • 1/4 cup Milk
  • Water for kneading
    For stuffing:
  • ½ cup steamed sweetcorn
  • ½ cup mixed coloured bell peppers
  • ¼ cup finely chopped onion
  • Salt to taste
  • ½ cup of grated cheese

Method

  • In a mixing bowl, mix all the ingredients given under stuffing except cheese. Mix it well and
  • keep it aside.
  • In another mixing bowl, mix flour, salt, baking powder, oil.
  • Mix well by adding milk and water till it forms a smooth dough. You may need only very little
  • water for making the dough as we added milk.
  • Divide the dough into equal sized balls and roll it in the form of circular disc of 6 to 8 inch
  • diameter.
  • Heat a large skillet. Sprinkle oil and cook tortilla on both sides.
  • Flip the tortilla at 10 seconds frequency till it puffs up or forms small air pockets her and there.
  • When the air bubble appears, reduce the flame to low, spread the cheese all over make sure
  • it does not spill over to the pan.
  • Place the sweet corn mixture on top of it.
  • Cover it for a minute or till cheese melts.
  • Once the cheese melts, using spatula, lift the one end of the tortilla to the other side forming a
  • semicircle.
  • Flip to cook both the sides for few more seconds.
  • Transfer to a place and cut into wedges.
  • Serve with Salsa.
