Dal Pakwan

Ingredients

    For Pakwan:
  • 3/4 cup Kosh Oats + Wheat Atta
  • ¼ cup of maida
  • 1/4 tsp ajwain
  • ½ tsp cumin seeds
  • 1 tsp of freshly crushed black pepper
  • Salt to taste
  • 1 tbsp Ghee
  • Water for making dough
  • Oil for deep frying
    For Dal:
  • ½ cup Channa Dal
  • ½ tsp Turmeric powder
  • 1 slit green chilli
  • 1 tsp cumin seeds
  • A pinch of asafoetida
  • 1 and ½ cups of Water for cooking dal
  • 1 tbsp of ghee
  • 10 curry leaves
  • 2 dry red chilli
  • Salt to taste
  • ¼ cup of finely chopped onion
  • 1 tsp finely chopped coriander leaves
  • 1 tsp red chilli powder

Method

    For Pakwan:
  • In a medium size mixing bowl, Add Koshoats, Maida, ajwain, cumin seeds, ground black pepper, ghee and salt. Add water slowly and make a smooth dough.
  • Cover the dough using damp cloth for 30 minutes.
  • Divide the dough into equal parts and roll it into a circular disc of approx. 3 to 4 inch diameter.
  • Prick the surface using a fork.
  • Heat oil in a kadai and deep fry the pakwan till it becomes crisp and golden in colour.
    For Dal:
  • Soak the channa dal for an hour.
  • Pressure cook it by adding turmeric powder, Cumin seeds, slit green chilli and asafoetida.
  • Once the pressure subsides, slightly mash it.
  • Heat ghee in a seasoning pan.
  • Crackle cumin seeds, curry leaves and dry red chilli.
  • Pour this seasoning to the cooked dal and mix well.
  • Transfer the content to a bowl, top it with chopped onion and coriander leaves.
  • Sprinkle with red chilli powder and serve hot with pakwan.
