Ingredients

  • ½ cup Kosh Broken Oats
  • ¼ cup Semolina
  • Salt to taste
  • ½ cup curd
  • Water as required to make batter
  • A pinch of baking soda
  • 3 tsp of plain oil
  • ½ tsp of mustard seeds
  • 5 finely chopped curry leaves
  • ½ cup finely chopped onion
  • 1 finely chopped green chillies
  • ½ cup grated carrot
  • 2 tbsp finely chopped coriander leaves
  • 10 roasted cashew nuts

Method

  • In a mixer grinder, add broken oats and semolina.
  • Grind it till it becomes coarse powder. Add curd, salt, enough water and grind one more time.
  • Transfer it to a wide bowl and set it aside.
  • Heat oil in a medium size kadai/pan.
  • Add mustard seeds and wait until it starts to splutter.
  • Add green chilli, curry leaves, onion, carrot and Sauté it without changing its colour.
  • Transfer this cooked mixture along with coriander leaves to the batterprepared and mix it well.
  • Taste and adjust the salt.
  • If the batter is too thick, add some more water to ensure that it gets a pourable consistency like idli batter.
  • Just before pouring the batter into the idli mould, add baking soda and mix well.
  • Pour a ladle full of this batter into the idli mould and steam it for 10 minutes.
  • Transfer it to a plate and serve it with chutney powder mixed with gingelly oil.
