Vegetables Kathi Rolls

Ingredients

    For Roti:
  • 1 cup Kosh Oats + Wheat Atta
  • Salt to taste
  • Water for making dough
    For Vegetable Masala:
  • 3 tsp oil
  • ½ tsp cumin seeds
  • ¼ cup Sliced onion
  • 1 tsp ginger garlic paste
  • ¼ cup green peas
  • ¼ cup julienned green capsicum
  • ¼ cup julienned red capsicum
  • ½ cup cauliflower florets
  • ½ cup julienned Carrots
  • 1 tsp Red chilli powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste
  • 2 tbsp finely chopped Coriander leaves
  • 2 tbsp mint chutney

Method

    For Roti:
  • Add flour and salt in a mixing bowl. Add water slowly and make a smooth dough.
  • Divide the dough into equal parts and roll it into a circular disc of approx. 6 to 8 inch diameter.
  • Heat the tawa/griddle. Place the rolled roti on it and cook both the side.
  • Keep the rolls aside till the stuffing is ready.
    For Vegetable Masala:
  • Heat oil in a wide pan.
  • Crackle cumin seeds once hot and add sliced onion. Sauté well.
  • Add ginger garlic paste and continue to saute it for a minute.
  • Add all the chopped vegetable and salt to taste. Mix well.
  • Cook till all the vegetables are cooked well but retains its shape and crisp.
  • Add red chilli powder, Coriander powder, garam masala. Mix well.
  • Garnish with coriander leaves.
    For Making Rolls:
  • Place the roti on the cutting board.
  • Smear the mint chutney on top of it leaving some space around the corner of the roti.
  • Place 3 tablespoons of stuffing in the center and roll tightly to form the roll.
  • Serve with green chutney, cut onion and lemon wedges.
