Spring Dosa

Ingredients

    For Dosa:
  • 1 cup Kosh Oats + Wheat Atta
  • 1/4 cup rice flour
  • 2 tablespoons of rava
  • Salt to taste
  • Water for making batter
  • Oil and butter for cooking dosa
    For Stuffing:
  • 3 tsp oil
  • 1 tsp of garlic
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped green capsicum
  • ¼ cup finely chopped cabbage
  • 1/4cup finely shredded carrot
  • 1 tsp of red chilli sauce
  • 1 tsp of soy sauce
  • 2 chopped spring onion
  • Salt to taste

Method

    For Dosa:
  • Add atta, rice flour, rava and salt in a mixing bowl. Add water slowly and make a smooth running batter.
  • Keep it aside for 15 to 20 minutes.
  • After 15 – 20 mins, mix it well. If the batter is too thick dilute it with sufficient water to make it into adosa batter kind of consistency.
    For Stuffing:
  • Heat oil in a wide pan.
  • Add garlic and add sliced onion. Sauté well.
  • Add all the chopped vegetable and salt to taste. Sauté it in a high flame.
  • Add red chilli and soy sauce. Mix well.
  • Once the stuffing is cooked, turn off the flame and bring to room temperature.
    For Assembling:
  • Heat dosa pan.Sprinkle little water and wipe it using a cloth.
  • Reduce the flame and Pour a ladlefull of batter and rotate it in circular motion using the ladle towards the end of the dosa pan.
  • Drizzle oil around the dosa.
  • When the dosa is almost cooked, Spread the butter and place a portion of stuffing at one end.
  • Using the spatula, roll the dosa tillyou reach the other end.
  • Cut into two and serve it with coconut or mint chutney.
