ZUCCHINI PANCAKES

Ingredients

  • Kosh Broken Oats - 1 cup
  • Semolina - 2 tbsp
  • Baking soda - 1/4 tsp
  • Baking powder- 1/4 tsp
  • Egg - 1 Milk- 1/4 cup
  • Zucchini - 1 (grated)
  • Parsley - 3 tbsp (chopped)
  • Red bell pepper - 1/2 (chopped)
  • Green chilli - 3 (chopped)
  • Garlic - 3 (chopped)
  • Chilli flakes & salt as per taste

Method

  • Grind Kosh Broken Oats. Add semolina, baking soda and baking powder, mix well and keep aside.
  • Sprinkle some salt on zucchini, leave for some time & squeeze out the water.
  • Take a bowl. Whisk the egg & milk nicely.
  • Add the Oats mixture & all veggies & spices as per taste. Make a nice thick batter. Add water for proper consistency and leave batter for 10 mins.
  • Prepare pancakes by applying little oil on both sides n enjoy with dip of your choice.
